When Mark Foster, a commercial film and video director, moved to Delaware County a few years ago, he found it impossible to buy a good cup of coffee locally. A hands-on tinkerer, he learned how to fire-roast beans in his garage using a contraption consisting of a rotating basket inside a backyard barbecue. Considering his setup is something you might find tutorials for on sites such as the Art of Manliness, you’d expect the results to be crude. But Foster’s beans (he favors varieties from Uganda, Sumatra and Ethiopia) yield brews that are mellow and aromatic — and are served in Brooklyn restaurants like the Pines and Willow.
